We offer a number of products that are traditionally used in Cajun Cooking but have been adapted to todays cooking.
The company started by processing authentic Cajun Filè by harvesting and drying Sassafras leaves the old fashioned way. We then branched out into our own brand of Cajun Seasonings and flavors.
Our Products are "All Louisiana" and have earned the Certified Cajun and Certified Louisiana designation by the Louisiana Department of Agriculture. This is very important to us since it means that we're recognized as truly authentic Cajun products with all of our ingredients are Louisiana born and processed.

Tom, is a native of Abbeville and Maurice, LA in Vermilion Parish and has lived in South Louisiana all his life . He has acquired a broad base of knowledge in Cajun Cuisine and local cooking techniques with a heavy influence in French techniques. He learned to cook by watching his Mother, Tookoo Lewis Villien, and both of his grand-mothers cook up some delicious meals from the bounty of South Louisiana.
From the game birds brought home after a hunt, to the seafood from the nearby coast, to the roasted meats over a spit; he watched and learned how to handle not just the cooking but the seasoning of the fare. This attention to detail is evident in the flavors that are imparted by his products.
He has worked in the financial services industry for over 39 years and has owned TJ's Specialty Products since 2017. He has over 50 years in developing and studying seasonings and spices that are used in Cajun cooking.
Kati is also a native Cajun from the Ville Platte in Evangeline Parish, Louisiana. She has a strong background in the "Prairie" traditions of Cajun Cuisine which promote smoked meats, sweet potatoes, and other side dishes and seasonings for cooking Cajun Style.
She is a graduate of LSU and has worked in the Dental Industry for nearly 40

Our Tookoo's Pepper Vinegar is made from our own homegrown Tabasco Peppers and made the way it was made many decades ago. Our T J's Cajun Seasoning is now Low Salt and contains No MSG and No Sugar. It's healthy and contains all of the garlicky flavor that you'd expect from a Cajun Cook without also being excessively hot.
